Combine All Ingredients
I’ve been saying for years that one day I will publish a cook book. It will be called “Combine All Ingredients”. That’s the way I cook. And I never sift the flour, cream the butter and sugar, separate anything or make any wells. Nobody’s complained yet.
I’m a firm believer that anything homemade is better than all that processed poison out there so everyday cooking should (and can) be quick, hassle free and most of all healthy.
These muffins I (literally) threw together this morning. They’re delicious, healthy and it took me longer to take the photos than it did to make them.

Here’s the recipe.

HEALTHY BANANA MUFFINS with a little bit of chocy.
1 cup plain flour
½ cup wholemeal flour
¼ cup white sugar
¼ cup brown sugar
1 cup wheat germ
3 tsp baking powder
½ tsp salt
2 bananas (medium) mashed
½ cup milk
¼ cup vegetable oil
2 eggs
½ cup chocolate chips
Preheat oven to 280C
Combine all dry ingredients in bowl and stir well.
Combine all wet ingredients in another bowl and mix until blended.
Add wet ingredients to dry and stir until just combined then stir in choc chips.
Spray muffin tins (large or small) with non-stick spray and spoon in mixture.
Bake small muffins for 15mins, large for 25mins.
